Here is my take.
You already have a Gray dial for the Borealis Sea Dragon.
If you will fabricate a Borealis Forum Watch that is a white dial using an existing case, but DLC'd(suggesting using the Sea Dragon), then I guess gray is ok to use on the Scorpion Fish.

If there will be no other white dial watches from Borealis, I believe the Scorpion Fish would be a great case to showcase it. White can be both a dressy and casual style.
If you do not want an "aggressive" pure opaque white, maybe look into something like the Rolex EXP II polar white dial or the PAM 523. The Aegir I have exhibits a "polar white dial" which is stellar.
